Betty Crocker Shake-N-Pour Dessert Mixes

One thing my two girls and I love to do is bake, mainly because we all 3 have a big sweet tooth. However A lot of the time we are just to busy with school activities, homework and sports. Betty Crocker to our rescue!


With the new Betty Crocker Shake n Pour mixes we can whip up some brownies and cupcakes in less than 30 minutes and the best part of it all, is literally no clean up. Just add water, shake and pour into a pan. So easy!!



The girls were excited to try such an easy treat, main reason it's sweet and of course no clean up mess, means they don't have any dreaded dish duty! And guess what?!? The container can be recycled!!


Once they we were done baking, we devoured! They were absolutely delicious, soft yummy goodness.

Texas Caviar



Texas Caviar


16 oz. package frozen corn
2-3 Tablespoons olive oil
1/2 cup chopped red onion
6 Roma tomatoes
2 jalapeno peppers, seeded and finely chopped
1 red bell pepper, chopped (about 1 cup)
2 teaspoons minced garlic
2 cans (15 oz each) black beans, drained and rinsed
2 large avocadoes, peeled and cut into 1/2" pieces
1 cup chopped fresh cilantro

Preheat oven to 400 degrees
In a medium bowl, combine corn and oil, toss to coat. Spread corn in ungreased cookie sheet. Bake about 20 minutes or until corn begins to turn light golden brown, stirring every 5 - 10 minutes. Cool 10 minutes.

In a large bowl, combine cilantro, onion, tomatoes, jalapenos, bell pepper, garlic, beans, roasted corn - mix well. Add dressing - mix well. Add avocadoes, toss gently to combine. Serve immediately or refrigerate up to 6 hours.

To make more than 6 hours in advance, add cilantro, dressing and avocadoes just before serving.

Dressing:

1 Tablespoon salt
3/4 teaspoon ground cumin
6 Tablespoons fresh lime juice
5 Tablespoons olive oil
2 Tablespoons cider vinegar

In a small jar with tight lid, combine all ingredients; shake well until blended.

Serve with your favorite tortilla chips!!

Nearing Home: Life, Faith and Finishing Well By Rev Billy Graham is not just for the older crowd. I'm 33 years old and I'd like to think God will give me the opportunity to Grow old. Billy Graham explains what it is like to Grow old, he talks about the process. We don't know when God will call us home, so we need to be prepared every single day of our life.
Billy Graham writes about health issues, retirement, loss of a spouse. You would think of it as being a sad and depressing book but it really is not. It was actually very uplifting and his excitement for one day being called home and meeting Jesus Christ face to face, gave me a great deal of excitement too. I can't wait!!

Heaven is for Real By Todd Burpo - Review

Heaven is for Real for Kids told by Colton Burpo is a wonderful book to read. It is the story of one little boys death and what his experience in Heaven was like. He was brought back to life, but what he describes while in Heaven is so amazing. The story is sweet, a re-telling of a very powerful emotional experience of a young child, retold by his parents, with the help of a co-editor. The storyline is good, and at times heart breaking. There are many scriptural quotes from the father that support what the little boy saw in heaven.
As a Christian, it just makes me that more excited to one day meet face to face with my Lord and Savior, Jesus Christ.
